Why I Love This Simple Banana Zucchini Bread:

There’s so many reasons why I love this recipe. Some of them include:

  • It’s Easy to Make: Mix everything into a bowl, pour into a loaf pan and leave the rest to your oven!
  • It’s Healthy: This Simple Banana Zucchini Bread is a lot lower in sugar compared to traditional recipes, and is full of nutrient-dense foods like zucchini, eggs, bananas, cinnamon and nourishing fats from the almond and coconut flour.
  • Family-Friendly: This is a recipe the whole family can enjoy, and it fits several dietary needs including gluten-free, dairy-free, and low in sugar.
  • It’s Delicious: It’s full of flavor, moisture, and is simply delicious.

Recipe Suggestions:

  • Bananas: It’s best to use ripe bananas in this recipe to provide additional sweetness.
  • Zucchini: I recommend using a spiralizer or box grater to shred the zucchini into small pieces. Make sure to squeeze out any excess moisture.
  • Eggs: Opt for organic if you can. Want to make it egg-free? Substitute 1 egg for a mixture of 1 Tbsp. of ground flaxseed meal with 3 Tbsp. water. You can get high-quality flaxseed meal from Thrive Market.
  • Maple Syrup: Is a natural sugar that provides additional sweetness. Opt for 100% pure maple syrup.
  • Sea Salt: Helps bring out the flavor and provides trace minerals. Opt for a high-quality sea salt. I love the Redmond’s or Celtic Sea Salt Brands. Get them Thrive Market.
  • Almond Flour & Coconut Flour: Are great gluten-free flours that keep this Simple Banana Zucchini Bread full of moisture.

Recipe Variations:

Want to add some extra fiber? Toss in 1 Tbsp. of hemp seeds or flaxseeds.

Want to add some crunch? Add walnuts or pecans on top.

Want to use a different sugar? Try raw honey instead of maple syrup.

Want to make it egg-free? Substitute 1 egg for a mixture of 1 Tbsp. of ground flaxseed meal with 3 Tbsp. water.

Storage:

Store in an airtight container in the fridge for up to one week. You can also freeze extras for later use.
