Simple Banana Zucchini Bread

Ingredients

mashed banana (about 2 medium bananas)

maple syrup

grated zucchini (about 1 small zucchini) squeezed of excess moisture

almond flour

coconut flour

cinnamon

baking soda

Optional: walnuts or pecans for topping, and hemp seeds or flaxseed meal for extra fiber and healthy fats
Instructions
Preheat the oven to 350 degrees F. Cover a bread loaf pan with parchment paper.
In a medium bowl, mash bananas until smooth (it’s okay if some lumps are still present).
Add the eggs, maple syrup, and vanilla extract. Mix in grated zucchini.
In a separate bowl, mix together the almond flour, coconut flour, cinnamon, baking soda, and salt until all lumps are gone.
Add wet ingredients into dry ingredients and mix well.
Pour the mixture into the lined loaf pan and spread with a spatula until the surface is even.
Bake for 55-60 min or until an inserted toothpick comes out clean.
Let cool for at least 20 minutes before serving, and enjoy with some grass-fed butter or natural nut butter!
