Peanut Butter Chocolate Chip Bars

Are you a fan of Perfect Bars? Save yourself some money by making these simple Peanut Butter Chocolate Chip Bars! 

Although I’m a huge fan of Perfect bars, they can certainly be costly. 

That’s why I decided to create a recipe that was similar to them, but was simple to make and a lot cheaper. 

What are Perfect Bars?

Perfect bars have been gaining a lot of popularity lately. You can find them in the refrigerated section at most grocery stores, and are typically made with nut butter, egg powder, milk powder, honey, seeds, and some type of topping such as chocolate chips or coconut flakes.

They also contain “whole food powders” which typically come from different vegetables and fruit. Although this recipe doesn’t contain any whole foods powders, egg powder, or milk powder, they’re still a great source of nutrients and protein. 

What You’ll Need:

Peanut Butter: You’ll want to use a creamy natural peanut butter for this recipe, which mean it doesn’t have any added oils or sugars. Some of my personal favorites include Smucker’s natural peanut butter and the organic natural peanut butters from Aldi and Costco.

Coconut Flour: This flour is made from coconut flesh that has been dried and ground up. It’s a great option if you’re looking for gluten-free flours. It’s also thicker in consistency, so when replacing regular flour in a recipe for coconut flour, the ratio is typically 1/3-1/4 cup coconut flour for every 1 cup regular flour.

Collagen Peptides: Not only do I love adding collagen peptides to my morning cup of coffee, I also like to incorporate it into baked goods, smoothies, oatmeal (and of course these Peanut Butter Chocolate Chip Bars). They add extra protein, as well as can help provide other health benefits including supporting gut health and joints. If you don’t have collagen on hand, you can certainty use your favorite protein powder as well.

Honey: This helps to provide sweetness and also helps to bind the ingredients together. I recommend using raw honey since it retains more nutrients compared to regular honey.

Sea Salt: Adding a little sea salt on top provides a little touch of salty flavor that’s delicious with peanut butter and chocolate. I recommend using sea salt vs regular table salt to get more nutrients (table salt is often highly processed and stripped of nutrients). I recommend flaky sea salt in this recipe, but it doesn’t have to be. 

Chocolate Chips: I used dark chocolate chips for this recipe but you can certainly use whatever you have on hand.  If you’re looking for a dairy-free version for chocolate chips, I love the Enjoy Life brand.

Substitutions:

You can substitute other nut butters for the peanut butter including almond butter or cashew butter. Just make sure they are natural forms and don’t contain the added sugars or oils.

Although I have’t tried it, you could try using maple syrup instead of honey.

Feel free to play around with toppings and add extra goodies such as coconut flakes, slivered almonds, or chia seeds.

Ingredients

  • 1 cup natural peanut butter
  • 1/3 cup coconut flour
  • 3 Tbsp. collagen peptides (or your favorite protein powder)
  • 3 Tbsp. honey
  • 1 tsp. vanilla extract
  • sea salt flakes, for topping
  • 1/4 cup dark chocolate chips

Instructions

  • In a medium bowl, mix together the peanut butter, coconut flour, collagen, honey, and vanilla extract.
  • Line a 9x9 inch baking dish (or something similar) with parchment paper (this makes for easy removal of the bars). Press mixture down evenly throughout the entire dish.
  • Sprinkle sea salt flakes and chocolate chips on top (it helps to press down the chocolate chips into the mixture).
  • Place bars in the freezer for about 1 hour to allow to set.
  • Remove from freezer and cut into 8 squares.
  • Keep bars in the refrigerator in an airtight container for up to two weeks. If you would like the bars more firm, you can also keep them in the freezer and take out as needed.
