  1. Start by prepping the spinach. I used frozen spinach that was completely thawed and squeezed out all of the water using a kitchen towel. You can also use fresh spinach that you’ve cooked. I’d recommend cooling it first and also making sure all of the water is removed. 
  2. In a large mixing bowl, add the artichokes, water chestnuts, Greek yogurt, mayonnaise (I used avocado-oil-based mayo), and seasonings. 
  3. Stir until evenly combined and adjust servings as needed.

  • Drain the spinach well. Excess moisture can make the dip watery, so don’t skip this step. 
  • This dip tastes even better after chilling for a few hours, making it perfect for meal prep or entertaining.

Ingredients

  • 10 oz. frozen spinach, thawed and water removed
  • 10 oz. artichokes, chopped
  • 8 oz water chestnuts, diced
  • 1 ½ cup plain Greek yogurt
  • ½ cup mayo (I like Primal Kitchen Avocado Oil Mayo)
  • 2 tsp. garlic poder
  • 2 tsp. onion powder
  • Salt, to taste

Instructions

  • In a large mixing bowl, add the spinach, artichokes, water chestnuts, Greek yogurt, mayo, garlic powder, onion powder, and salt.
  • Mix until evenly combined.
  • Adjust seasonings as needed.
  • Serve chilled with crackers, celery sticks, carrots, or cut bell peppers.
