Cinnamon Apple Walnut Muffins

Enjoy these delicious Cinnamon Apple Walnut Muffins for a healthy snack or add to your morning breakfast!

These muffins filled with fiber, healthy fats and natural sweetness from apples that the whole family will enjoy. 

Top them with some butter or nut butter, and your taste buds will thank you. 

Ingredients Needed & Health Benefits:

Almond Flour: A great gluten-free flour that provides some healthy fats, antioxidants, calcium, and magnesium. I typically get a large bag of almond flour from my local Costco or from Thrive Market. 

Rolled Oats: Provide extra fiber and structure to these apple muffins. They also help support gut health, and balanced blood sugars. If you’re gluten-free, make sure the oats are certified gluten-free. I love the One Degree brand of oats (also available at Costco or from Thrive Market)

Apples: Another great source of fiber, along with nutrients like Vitamin C and potassium. Apples are also considered a low-glycemic food, which means they don’t spike blood sugar as high. For this recipe, I’d suggest using Honeycrisp, Braeburn, or Green Apples.  

Eggs: Used to provide structure for these muffins, but also contain nutrients including lutein, selenium, and Vitamin D. 

Sweetener: These muffins are low in sugar, with just 1/3 cup of sugar to the entire batter. I’d suggest using either brown sugar or cane sugar for these Cinnamon Apple Walnut Muffins.  

Coconut oil, Butter or Ghee: Provides additional moisture and flavor to the recipe. Want to make it dairy-free? Opt for coconut oil. I personally love to use butter in these muffins.

Vanilla Extract: Helps to enhance the flavors.

Milk: Adds more moisture to the recipe. I love to use unsweetened almond or macademia nut milk, but you can use whatever type of milk you’d like. 

Cinnamon: Adds extra flavor, and and health benefits. Cinnamon is an antioxidant, and can be helpful for improving insulin sensitivity. Opt for cinnamon in the form of “ceylon.”

Salt: Helps bring out the flavor to the recipes. Remember, not all salt is created equal. Opt for ones that aren’t stripped from nutrients such as Redmon’s salt (which you can also get through Thrive Market).

Substitutions & Additions:

Want to make it nut-free? Switch out the almond flour for cassava or all-purpose flour. You can also omit the walnuts.

Want to make it egg-free? Replace each egg with a simple flaxseed mixture made with one tablespoon of flax seeds and three tablespoons of water. For this recipe, you would need two tablespoons of flaxseed and 6 tablespoons of water.

Want to add extra nutrients? You can add in a tablespoon of hemp or flaxseed, or a scoop of collagen peptides to add additional protein. 

 

Storage:

Store these Cinnamon Apple Walnut Muffins in an airtight container in the refrigerator for up to one week. 

Have extras or want to double batch it? Simply store in a freezer-safe container for up to three months.

Ingredients

  • 1 cup almond flour
  • 1 cup oats
  • 1/2 cup walnuts
  • 1/3 cup brown or cane sugar
  • 1/2 Tbsp. cinnamon
  • 1 tsp. baking soda
  • 1/8 tsp. salt
  • 1/2 cup milk
  • 1/4 cup coconut oil, butter or ghee, melted
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 1/2-2 cups apples, diced

Instructions

  • Preheat the oven to 375 degrees F.
  • Line a muffin tin with muffin liners or spray each muffin cup.
  • Next, mix the dry ingredients together in a large bowl.
  • Then mix the wet ingredients together in another bowl (except the apples).
  • Slowly pour the wet ingredients into the dry ingredients.
  • Fold in the apples.
  • Pour the mixture into each muffin cup and fill about 3/4 full.
  • Bake in the oven for 22-25 minutes, or lightly golden brown and a toothpick inserted into the center comes out of clean.
  • Let cool for about 10 minutes before serving,

Notes

Store these Cinnamon Apple Walnut Muffins in an airtight container for up to one week. You can also freeze extras for later use up to three months.
