Sweet Potato Turkey Chili

Chili is one of my all-time favorite meals during cold Minnesota winters. Not only is it super simple to make, it also tastes even better as a leftover meal!

And guess what? This Sweet Potato Turkey Chili is also kid-friendly, making it a great way to get the kids to eat their veggies. My daughter devours this chili every time we have it (like lick the bowl clean type of devour!)

So start the new year right and warm up with this simple and healthy Sweet Potato Turkey Chili. This recipe can also fit a Paleo, Dairy-free, Gluten-free and Whole30 diet.

Ingredients:

· 1 lb. ground turkey

· 1 small yellow onion, diced

· 1 green pepper, diced

· 28 oz. diced tomatoes

· 16 oz. tomato sauce (look for one without added sugar)

· 2 medium sweet potatoes, peeled and diced

· 2 cups spinach, diced

· 1 Tbsp. cumin

· ½ Tbsp. minced garlic

· ½ tsp. paprika and chili powder (add more for more heat)

· Salt and pepper, to taste

· ½ cup water

Instructions:

1. In a large skillet, brown turkey until no longer pink.

2. Add in onion and peppers and sauté for an additional 3-4 minutes.

3. Add in the diced tomatoes, tomato sauce, sweet potatoes, spinach, spices and water.

4. Cover and simmer for 25-30 minutes (or until sweet potatoes are soft). Stir occasionally throughout.

5. Top with avocado slices, cilantro, green onion, cheese or plain Greek yogurt (optional)

6. Store leftovers in the fridge for up to one week.
