Peanut Butter Apple Nachos

With apples now in season here in Minnesota, I’m all about incorporating them in different ways – including making them into nachos.
They’re not only really simple to make, they’re also full of fiber and healthy fats which help keep you full longer. Plus, they make a great after-school snack for kids.
Tips for Ingredients:
Peanut Butter: When buying peanut butter, look for a natural peanut butter (one with just peanuts and salt). It’s best to use a runny and creamy peanut butter for this recipe. If your peanut butter is on the thicker side, simply microwave it for 20 seconds to thin it out.
Looking for a peanut-free option? Simply replace the peanut butter with any other nut or seed butter such as almond, cashew butter or sunbutter.
Honey: I like to use raw honey since it still contains its natural nutrients and antioxidants. You can also swap out the honey and use maple syrup instead.
Walnuts: I love walnuts for this recipe, but feel free to use other nuts such as almonds or pecans.

Peanut Butter Apple Nachos

- 4 medium red apples, sliced
- 1/4 cup natural creamy peanut butter
- 1/4 cup unsweetened coconut flakes
- 2 Tbsp. honey or maple syrup
- 2 Tbsp. chopped walnuts
Instructions
- Wash and slice apples. Soak in a large bowl filled with water and 2 Tbsp. lemon juice for 3 minutes (this helps to reduce browning.)
- Rinse the apples and place on paper towel to dry.
- Once dry, lay apple slices on a serving platter.
- Drizzle the peanut butter, coconut flakes, honey, and walnuts on top. Add more ingredients if desired.
