Ingredients

Wet Ingredients

  • 2 eggs
  • 2 Tbsp.melted coconut oil
  • 1 tsp. vanilla extract
  • ½ cup creamy natural peanut butter

Dry Ingredients

  • 2 cup oats
  • ½ cup coconut sugar
  • 1 Tbsp. ground flaxseed
  • 1 tsp. baking soda
  • ¼ tsp. sea salt
  • ¾ cup chocolate chips

Instructions

  • Preheat the oven to 350 degrees.
  • Line two baking sheets with parchment paper; set aside.
  • In a mixing bowl, mix together the egg, coconut oil, vanilla and natural peanut butter.
  • In another bowl, mix together the oats, sugar, flaxseed, baking soda and sea salt. Add to wet ingredients. Mix well.
  • Fold in the chocolate chips.
  • Make dough into small bowls about 2 inches in diameter, and place on baking sheet. Continue with remaining dough.
  • Take a fork and press down on each cookie, and sprinkle a pinch of sea salt on top of each cookie.
  • Bake in the oven for 20-22 minutes, or until until cookies are lightly golden brown on the bottom and edges.
  • Remove from the oven and let cool before eating.
