Chicken Salad Lettuce Wraps

Try these Chicken Salad Lettuce Wraps that not only combine sweet and savory with a bit of crunch – it’s also packed with protein, low in carbs, and super easy to prep ahead of time.
Want to switch it up? You can also use this chicken salad recipe on top of lettuce greens, spread on sprouted or gluten-free bread, or served in celery sticks.
Chicken Salad Lettuce Wraps
Ingredients
- 2 cups chicken breast, cooked
- 1/2 cup plain Greek yogurt
- 2 Tbps. unrefined mayo (I like Primal Kitchen brand)
- 1/2 cup celery, diced
- 1/2 cup grapes, quartered
- salt and pepper, to taste
- 1/2 tsp garlic powder
- 1/2 cup toasted walnuts
- romaine lettuce leaves
Instructions
- Mix all the ingredients except for the walnuts together. Set aside.
- To toast the walnuts: Preheat oven to 350 degrees F. Place walnuts in a baking sheet and bake in oven for 8-10 minutes (or until golden brown).
- Once walnuts are done in the oven, let cool and then mix into chicken salad.
- Spread chicken salad into romaine lettuce leaves like picture shown.
