Greens and Goat Cheese Egg Bake

This Greens and Goat Cheese Egg Bake is the perfect way to start your day off right! A high-protein, quick breakfast option that also includes fiber-rich veggies – you’ll stay energized and full for hours.

Ingredients Needed:

  • Spinach
  • Broccoli
  • Goat Cheese
  • Eggs
  • Cottage Cheese
  • Garlic Powder
  • Italian Seasoning
  • Salt
  • Pepper
  • Turmeric (optional but great for adding more antioxidants in!) 

How to Prepare this Greens and Goat Cheese Egg Bake:

This quick and easy recipe is created by layering the greens at the bottom of a baking pan, topping it with the egg and cottage cheese mixture and baking it in the oven. 

Only requiring a baking pan and a bowl, this recipe won’t leave you a pile of dishes. 

Tips for the Best Greens and Goat Cheese Egg Bake:

  1. Use Fresh Ingredients: Using fresh spinach and broccoli will give this dish great flavor and make sure you use up your produce before it goes bad. However, feel free to use frozen, this dish will still taste great. 
  2. Adjust to Taste: Feel free to adjust the seasonings or add additional seasonings to meet the preferences of you and your family. 

Substitutions & Additions:

You can substitute or add any veggies into this egg bake, kale or arugula would make great green additions. Other options could be peppers, cauliflower, mushrooms and onions. 

Can You Make These Into Egg cups?

Absolutely!

Combine all ingredients into one bowl and scoop into individual muffin tins rather than adding to the baking dish. 

Bake at 375°F for 20-25 minutes or until a toothpick inserted into the middle of the egg cup comes out clean.

Ingredients

  • 2 cups spinach, chopped
  • 2 cups broccoli, diced
  • 4 oz. goat cheese, crumbled
  • 12 eggs
  • 1 cup cottage cheese
  • 2 tsp. garlic powder
  • 1 tsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. turmeric (optional)

Instructions

  • Preheat oven to 350°F.
  • Spray an 8x8 baking pan with cooking spray (I like avocado oil spray).
  • Layer the spinach, broccoli, and goat cheese in the pan.
  • In a medium-sized mixing bowl, mix together the eggs, cottage cheese, garlic powder, Italian seasoning, salt, pepper, and turmeric if you'd like.
  • Pour egg and cottage cheese mixture over the veggies in the baking dish.
  • Bake in oven for 40-45 minutes, or until a toothpick inserted in the middle comes out clean.
  • Store in the refrigerator for one week.
