Ingredients
2 cups
spinach, chopped
2 cups
broccoli, diced
4 oz.
goat cheese, crumbled

eggs
1 cup
cottage cheese
2 tsp.
garlic powder
1 tsp.
Italian seasoning
1/2 tsp.
salt
1/2 tsp.
black pepper
1/2 tsp.
turmeric (optional)
Instructions
Preheat oven to 350°F.
Spray an 8x8 baking pan with cooking spray (I like avocado oil spray).
Layer the spinach, broccoli, and goat cheese in the pan.
In a medium-sized mixing bowl, mix together the eggs, cottage cheese, garlic powder, Italian seasoning, salt, pepper, and turmeric if you'd like.
Pour egg and cottage cheese mixture over the veggies in the baking dish.
Bake in oven for 40-45 minutes, or until a toothpick inserted in the middle comes out clean.
Store in the refrigerator for one week.
