To make these Spinach & Broccoli Feta Egg Cups, you’ll need the following ingredients:
- Veggies including spinach and broccoli
- Feta cheese (omit if dairy-free)
- Eggs
- Milk of choice
- Minced garlic (can also use garlic powder)
- Italian seasoning
- Salt and pepper
- Baking powder

Spinach and Broccoli Feta Egg Cups

Course: Breakfast
Ingredients
- 1 cup broccoli, diced
- 1 cup spinach, diced
- 1/2-1 cup feta cheese
- 10 eggs, beaten
- 1/2 cup milk of choice
- 1/2 Tbsp. minced garlic
- 1/2 Tbsp. Italian seasoning
- Salt and pepper, to taste
- 1 tsp. baking powder
Instructions
- Preheat oven to 350 degrees F.
- Wash and dice all vegetables.
- Take a muffin pan and spray oil (I like to use Avocado oil spray) into each muffin cup or use a reusable silicone muffin pan.
- Add the broccoli and spinach to each muffin cup.
- Top the veggies with feta cheese.
- Mix the eggs and milk together in a mixing bowl.
- Add in all spices and baking powder.
- Pour the egg mixture on top of the feta cheese.
- Bake in the oven for 25-30 minutes (or until muffins are cooked through completely).
