- 1 cup mashed banana (about 2 medium bananas)
- 4 eggs
- 1/3 cup maple syrup
- 1 tsp. vanilla extract
- 1 cup grated zucchini (about 1 small zucchini) squeezed of excess moisture
- 1 cup almond flour
- 1/2 cup coconut flour
- 2 tsp. cinnamon
- 1 tsp. baking soda
- 1/4 tsp. sea salt
- Optional: walnuts or pecans for topping, and hemp seeds or flaxseed meal for extra fiber and healthy fats
Instructions
- Preheat the oven to 350 degrees F. Cover a bread loaf pan with parchment paper.
- In a medium bowl, mash bananas until smooth (it’s okay if some lumps are still present).
- Add the eggs, maple syrup, and vanilla extract. Mix in grated zucchini.
- In a separate bowl, mix together the almond flour, coconut flour, cinnamon, baking soda, and salt until all lumps are gone.
- Add wet ingredients into dry ingredients and mix well.
- Pour the mixture into the lined loaf pan and spread with a spatula until the surface is even.
- Bake for 55-60 min or until an inserted toothpick comes out clean.
- Let cool for at least 20 minutes before serving, and enjoy with some grass-fed butter or natural nut butter!
