Pina Colada Overnight Oats

If you like pina coladas, these overnight oats are for you!

I’m always looking for ways to simplify my breakfast meals since the mornings are typically hectic. I’ve found that overnight oats make the morning rush so less stressful because the majority of the prep work is already completed by the time you open up your fridge.

Simply mix everything the night before, let sit overnight in the fridge, and bam – you got your own version of a pina colada breakfast (without alcohol, sorry…)

This balanced breakfast meal is full of fiber, protein, healthy fats, and a touch of sweetness which will help keep you full and satisfied. Best of all, you can make these overnight oats any way you desire. Try adding different fruit, nuts, or spices to change up the flavor. Extra bonus – they make a super simple meal that your kiddos can help you make!

Ingredients:

• 1/2 cup gluten-free oats

• 1/2 cup full fat coconut milk (use a canned coconut milk such as this one)

• 1/2 cup plain Greek yogurt

• 1 Tbsp. honey

• 1/2 Tbsp. chia seeds

• 1/4 cup pineapple chunks, diced

• 2 Tbsp. unsweetened coconut flakes

Directions:

1. Mix the oats, coconut milk, Greek yogurt, honey and chia seeds in a medium bowl until well combined.

2. Pour mixture into a mason jar and cover with lid or plastic wrap.

3. Let chill in the refrigerator overnight.

4. Remove from refrigerator in the morning and stir in pineapple chunks and coconut flakes. Top with more if desired.

*Please note: overnight oats taste best when consumed the next day.
