Paleo Mini Corn Dog Muffins (Gluten-Free, Grain-Free)
Raise your hand if you’re a corn dog fan.
When I was little I loved getting a savory corn dog at the local fair.
The waffle-like taste of the batter paired with the deliciousness of the hot dog always made my mouth melt with happiness.
Now days, I stay away from deep fried foods so I missed that savory corn dog taste.
That’s why I made these Paleo Mini Corn Dog Muffins, which are a healthier alternative to the traditional deep fried corn dog.
They’re gluten-free, grain-free, low-sugar, and can also be dairy-free to fit into various lifestyles.
The batter doesn’t actually contain corn, but has a similar texture and taste. Paired with the uncured hot dogs and dipped in ketchup and mustard– it brings me back to my childhood all over again.
I also love that you can double the batch and freeze half of them for later use.
Made with less than ten simple ingredients, including uncured hot dogs, almond and coconut flour, eggs, and a touch of honey – these are bound to be a hit with the whole family!

Paleo Mini Corn Dog Muffins
Autumn EnloeIngredients
- 1 cup almond flour
- 1/2 cup coconut flour
- 3/4 cup unsweetened almond milk
- 3 medium eggs
- 4 Tbsp. butter, ghee or coconut oil (if made dairy-free), melted
- 2 Tbsp. honey
- 1 tsp. baking soda
- A dash of salt and pepper
- 6 uncured/nitrate-free hot dogs, cut into 6 pieces (I use Applegate or Aldi brand)
Instructions
- Preheat oven to 350 degrees F.
- Take a muffin pan and spray with oil (I like to use Avocado oil) into each muffin cup or use muffin liners.
- In a medium size bowl, mix together all the ingredients except the uncured hot dogs.
- Fill the muffin tin with the batter to make 12 muffins.
- Take uncured hot dogs and cut each hot dog into 6 pieces (for a total of 36 pieces).
- Place three pieces of uncured hot dog into each muffin cup.
- Bake in the oven for 20-25 minutes or until golden brown (I like mine more brown).
- Let cool before serving with ketchup and mustard.
