Paleo Mini Corn Dog Muffins

Ingredients

cup
almond flour
1/2
cup
coconut flour
3/4
cup
unsweetened almond milk
3
medium eggs

Tbsp.
butter, ghee or coconut oil (if made dairy-free), melted

Tbsp.
honey
1
tsp.
baking soda
A dash of salt and pepper

uncured/nitrate-free hot dogs, cut into 6 pieces (I use Applegate or Aldi brand)
Instructions
Preheat oven to 350 degrees F.
Take a muffin pan and spray with oil (I like to use Avocado oil) into each muffin cup or use muffin liners.
In a medium size bowl, mix together all the ingredients except the uncured hot dogs.
Fill the muffin tin with the batter to make 12 muffins.
Take uncured hot dogs and cut each hot dog into 6 pieces (for a total of 36 pieces).
Place three pieces of uncured hot dog into each muffin cup.
Bake in the oven for 20-25 minutes or until golden brown (I like mine more brown).
Let cool before serving with ketchup and mustard.
