I’m all about finding ways to incorporate more vegetables.

As a former pediatric dietitian, I worked with so many families that struggled with incorporating enough vegetables into their child’s meals – as well as their own.

But most people will eat cookies, right? So why not eat your cookie AND your veggies too?

Introducing Apple Cinnamon Zucchini Cookies!

Not only are they low in sugar, they’re also gluten-free and made with real food ingredients like zucchini, coconut oil, unsweetened applesauce, cinnamon and more.  

They’re also so simple to make they can be whipped up in less than ten minutes (which is a good thing considering I had to make three batches in the first week for my family!)

Ingredients

  • 3/4 cup shredded zucchini
  • 1 1/2 cup almond flour
  • 1/3 cup unsweetened coconut flakes
  • 1/3 cup gluten-free oats
  • 3 Tbsp. unsweetened applesauce
  • 2 Tbsp. honey
  • 2 Tbsp. coconut oil
  • 1 egg
  • 1/2 Tbsp. cinnamon
  • 1 tsp. vanilla extract
  • 1/2 tsp. baking powder

Instructions

  • Preheat oven to 350 degrees F.
    2. Take a spiralizer or mandolin to shred zucchini into small pieces.
    3. Place shredded zucchini into a mixing bowl. Add all remaining ingredients and mix well.
    4. Take a large baking sheet and cover with parchment paper.
    5. Use a small ice cream scooper to form the batter into small balls (you can  just use your hands as well).
    6. Place in the oven and bake for 20-25 minutes, or until cookies are golden brown.
    7. Wait until the cookies are cool to eat. Enjoy!
