Easy Banana Cinnamon Pancakes
When you hear the word “breakfast” what foods typically come to mind?
Usually it’s foods like cereals, muffins, bagels, waffles or pancakes.
Improving the breakfast meal is a common area that I work with clients on because what we eat in the morning can set the tone for the rest of the day.
That’s because when we eat a balanced breakfast our blood sugars stay stable, our sugar cravings decrease, and we feel more energized and focused during the day.
But guess what? You can still enjoy some of the traditional breakfast foods without feeling like you’re going to crash by 10:00 am.
And these Easy Banana Cinnamon Pancakes are an example of that.
Made with just six ingredients including banana, eggs, coconut flour, flaxseed and cinnamon – this simple paleo pancake recipe makes a great breakfast option that the whole family will love.
Ingredients:
· 4 eggs
· 2 ripe bananas
· 2 Tbsp. coconut flour
· ½ Tbsp. flaxseed
· ½ Tbsp. cinnamon
· 1 tsp. baking powder
· Coconut oil (for cooking)
Instructions:
1. Place all ingredients into a blender (I use a magic bullet).
2. Blend until smooth – about 10-15 seconds.
3. Heat coconut oil (1/2 Tbsp. at a time) in a medium size pan over medium heat.
4. Pour enough pancake batter into the pan to make a pancake about 3 inches in diameter.
5. Flip each side of the pancake for about 3-5 minutes, or until brown.
6. Repeat with the rest of the batter.
7. Add your choice of toppings and enjoy!
