Spinach and Broccoli Feta Egg Cups

Ingredients
1 cup broccoli, diced
1 cup spinach, diced
1/2-1 cup feta cheese
10 eggs, beaten
1/2 cup milk of choice
1/2 Tbsp. minced garlic
1/2 Tbsp. Italian seasoning
Salt and pepper, to taste
1 tsp. baking powder
Instructions
Preheat oven to 350 degrees F.
Wash and dice all vegetables.
Take a muffin pan and spray oil (I like to use
Avocado oil spray
) into each muffin cup or use a
reusable silicone muffin pan
.
Add the broccoli and spinach to each muffin cup.
Top the veggies with feta cheese.
Mix the eggs and milk together in a mixing bowl.
Add in all spices and baking powder.
Pour the egg mixture on top of the feta cheese.
Bake in the oven for 25-30 minutes (or until muffins are cooked through completely).
