Ingredients
Wet Ingredients
2 eggs
2 Tbsp.melted coconut oil
1 tsp. vanilla extract
½ cup creamy natural peanut butter
Dry Ingredients
2 cup oats
½ cup coconut sugar
1 Tbsp. ground flaxseed
1 tsp. baking soda
¼ tsp. sea salt
¾ cup chocolate chips
Instructions
Preheat the oven to 350 degrees.
Line two baking sheets with parchment paper; set aside.
In a mixing bowl, mix together the egg, coconut oil, vanilla and natural peanut butter.
In another bowl, mix together the oats, sugar, flaxseed, baking soda and sea salt. Add to wet ingredients. Mix well.
Fold in the chocolate chips.
Make dough into small bowls about 2 inches in diameter, and place on baking sheet. Continue with remaining dough.
Take a fork and press down on each cookie, and sprinkle a pinch of sea salt on top of each cookie.
Bake in the oven for 20-22 minutes, or until until cookies are lightly golden brown on the bottom and edges.
Remove from the oven and let cool before eating.
