Easy No Bake Almond Butter Bars
Try this simple no bake almond butter bars made with nuts, fruit, oatmeal, almond butter and coconut for a delicious snack on the go!
I often hear from mothers that their go-to snack is a granola bar. These certainly come in handy in a hurry, but have you ever looked at what’s in most granola bars? Often times they’re packed with refined oils like canola or soybean oil and contain way more sugar than protein (which will just leave you hungry an hour later!)
That’s why I was on a quest to create a simple and tasty bar that contains protein, healthy fats, and carbs to help keep you feeling full for much longer, while also tasting amazing.
These Easy No Bake Almond Butter Bars also make a great option for the upcoming holiday season and caters to gluten free and vegan eaters.

Ingredients:
· 1 ½ cups nuts (I used ½ cup each of pecans, sliced almonds, and pepitas)
· ½ cup unsweetened coconut flakes
· ½ cup gluten-free oats
· ½ cup dried cranberries
· 1 tsp. cinnamon
· ½ cup almond butter
· ¼ cup maple syrup
· 3 Tbsp. coconut oil, melted
· 1 tsp. vanilla extract
Instructions:
1. Take an 8×8” square pan and line with parchment paper. Set aside.
2. In a medium mixing bowl, stir all dry ingredients together.
3. In another mixing bowl, stir all wet ingredients together.
4. Pour wet ingredients into the bowl with the dry ingredients. Mix well.
5. Pour the mixture into the 8×8” square pan.
6. Cover and place in the freezer for one hour.
7. Remove from the freezer and cut into mini squares (about 20).
8. Store in a sealed container or bag in the refrigerator for up to two weeks.
