One-Pan Roasted Garlic Chicken and Veggies

Ingredients
1.5
lb. chicken breast, cut into ½ inch pieces
2
large sweet potatoes, peeled and diced into ½ inch pieces
1
lb. green beans, ends trimmed
2
medium red onion, cut into wedges
1/4
cup avocado oil
1
Tbps. garlic powder
2
tsp. dried oregano
2
tsp. Italian seasoning
2
tsp. dries basil
salt and pepper
Instructions
Preheat oven to 400 degrees F.
Add all diced ingredients, avocado oil, and seasonings into a medium bowl and mix well.
Line a large, rimmed baking sheet with parchment paper.
Pour the chicken and vegetable mixture onto the baking sheet.
Roast in the oven for 30 minutes, or until chicken reaches 165 degrees F. and the sweet potatoes are soft.
Serve immediately or allow to cool down to room temperature to save for later use.
Notes
*This makes a great recipe to use for meal prepping. Simply divide into 4 different containers and use for meals the rest of the week!
